  • 1 package (14 oz) coleslaw mix (without dressing)
  • 2 carrots, peeled and shredded
  • ½ red bell pepper, very thinly sliced
  • 5 scallions, trimmed and thinly sliced
  • ¼ cup cilantro, minced
  • ¼ cup crushed pineapple
  • 1 tsp freshly grated ginger
  • 2 tbsp rice vinegar
  • 2 tbsp lime juice
  • 2 tbsp dark brown sugar
  • 2 tbsp vegetable oil
  • 2 tsp sesame oil
  • 2 tbsp stir-fry sauce
  • 1 tsp hot chili sauce
  • Salt and pepper, to taste


  • 1Combine the coleslaw mix, carrots, and red bell pepper in a bowl.
  • 2Add scallions, cilantro, and pineapple. Toss well to combine.
  • 3In a small bowl or measuring cup, combine the ginger, oils, vinegar, lime juice, sugar, stir-fry sauce, and hot chili sauce. Drizzle over coleslaw, and toss well.
