Avocado Salsa Verde Pasta

  • 1 medium ripe but firm avocado, peeled and pitted
  • 2 scallions, white and green portions, chopped
  • 3 tbsp fresh cilantro, chopped
  • 3 tbsp fresh basil, chopped
  • 2 tbsp fresh flat-leaf parsley, chopped
  • ¼ cup fresh lemon or lime juice
  • 3 tbsp liquid nondairy creamer
  • 1 tbsp olive oil
  • 8 oz low-protein pasta of choice
  • Salt and pepper, to taste


  • 1In a blender or food processor, puree the avocado, onions, cilantro, basil, parsley, lemon juice, creamer, and oil until smooth.
  • 2Season with salt and pepper.
  • 3Boil pasta in salted and oiled water according to package directions. Drain and add to salsa in a large bowl. Chill until ready to serve cold.
