For the salad

  • 1 large carrot, peeled and cut into thin matchsticks
  • ½ small jicama, peeled and cut into thin matchsticks
  • 2 cups iceberg lettuce, shredded
  • ½ cup fresh cilantro, chopped

For the jalapeño lime dressing

  • 1 tbsp onion, minced
  • 1 small jalapeño pepper, minced
  • 1 medium clove garlic, minced
  • 3 tbsp fresh lime or lemon juice
  • ¼ cup canola oil
  • Salt and pepper, to taste


  • 1Combine all the salad ingredients in a medium bowl.
  • 2Combine onion, jalapeño, garlic, and lime or lemon juice in a small bowl.
  • 3Gradually whisk in oil.
  • 4Season to taste with salt and pepper.
  • 5Just before serving, toss salad with dressing.
