Ingredients

For the salad

  • 1 large carrot, peeled and cut into thin matchsticks

  • 1/2 small jicama, peeled and cut into thin matchsticks

  • 2 cups iceberg lettuce, shredded

  • 1/2 cup fresh cilantro, chopped

For the jalapeño lime dressing

  • 1 tbsp onion, minced

  • 1 small jalapeño pepper, minced

  • 1 medium clove garlic, minced

  • 3 tbsp fresh lime or lemon juice

  • 1/4 cup canola oil

  • Salt and pepper, to taste

Instructions

  1. Combine all the salad ingredients in a medium bowl.

  2. Combine onion, jalapeño, garlic, and lime or lemon juice in a small bowl.

  3. Gradually whisk in oil.

  4. Season to taste with salt and pepper.

  5. Just before serving, toss salad with dressing.
