Salt and Pepper Jicama Fries

Everybody loves a fry! This recipe uses crunchy jicama instead of potatoes for a low-protein spin. Add a little salt and pepper and enjoy!

Ingredients

  • 1 medium-sized (about 1 ¼ -lb) jicama, peeled
  • 2 tbsp olive oil with a squeeze of lime juice
  • 1 tsp coarsely ground black pepper
  • ½ tsp sea salt

Instructions

  • 1Preheat your oven to 425°F.
  • 2Peel the jicama, and slice it into thin French fry‑sized sticks.
  • 3On a baking sheet lined with parchment paper, toss the jicama sticks with the lime juice–olive oil mixture, pepper, and salt.
  • 4Transfer to the oven, and bake for 40 minutes, stirring once halfway through. (You can also eat these fresh instead of baking them!)
