  • 1 rice paper wrap
  • ⅓ cup lettuce, shredded
  • 2 cherry tomatoes, sliced
  • ⅓ cup carrots, matchstick cut
  • ⅓ cup seedless cucumber, diced
  • 2 tbsp non-dairy cheese
  • 2 tbsp Catalina or vinaigrette dressing


  • 1Prepare rice paper wrap according to package directions.
  • 2Layer salad fillings, including dressing of choice, on rice paper wrap, leaving 3 inches uncovered at top.
  • 3Fold in both sides of wrap. Then, starting at the bottom, roll up tightly toward the top.
