Ingredients

  • 5 cups seedless watermelon, coarsely chopped
  • ½ medium English cucumber, peeled and coarsely chopped
  • ½ medium yellow bell pepper, coarsely chopped
  • ⅓ cup scallions, white and green portions, chopped
  • 3 tbsp fresh mint, chopped
  • ¼ cup fresh lime juice
  • ½ tsp salt
  • ½ tsp hot sauce
  • 1 small clove garlic, minced
  • 2 cups cranberry-raspberry juice

Instructions

  • 1Combine all ingredients, except juice, in a large bowl and stir well. Place half of this mixture in a food processor or a blender. Pulse 4 to 6 times, until finely chopped but some texture still remains.
  • 2Pour mixture into a large container. Repeat procedure with the remaining watermelon mixture. Stir in juice. Chill thoroughly before serving.
