Ingredients

  • 1/4 of a medium zucchini
  • 1 tbsp tomato paste
  • 1 tsp olive oil
  • 1 tsp balsamic vinegar
  • 1/4 tsp dried oregano
  • Pinch of salt
  • 2 tbsp Daiya® mozzarella style shreds

Instructions

  • 1Preheat the oven to 350°F.
  • 2Cut the zucchini into six 1/4-inch thick rounds.
  • 3In a small bowl, whisk together the tomato paste, olive oil, balsamic vinegar, dried oregano, and salt.
  • 4Spread the mixture evenly on the zucchini.
  • 5Top with the Daiya® mozzarella style shreds.
  • 6Place on a baking sheet and bake for 15 minutes, or until the shreds start to melt.
  • 7 Cool slightly and serve.
