Low-Protein “Bacon”

Chef tip: Bacon fat is low in protein but adds lots of delicious bacon-y flavor. Use it to cook thin slices of sweet potato and you’ll have a tasty treat!

Ingredients

  • 1 sweet potato, very thinly sliced

  • 6 tbsp canola oil

  • 3 tbsp bacon fat

  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 325°F.

  2. Coat a half-sheet baking pan with the canola oil and bacon fat and place it in the oven while it preheats.

  3. When the oven reaches 325°F, place 12 full-length slices of sweet potato onto the preheated sheet pan.

  4. Bake in the oven until golden brown, about 20 minutes.

  5. Remove when the potatoes are crisp and golden. Place them on a paper towel, and season to taste with salt and pepper.
