  • 1/4 of a medium zucchini

  • 1 tbsp tomato paste

  • 1 tsp olive oil

  • 1 tsp balsamic vinegar

  • 1/4 tsp dried oregano

  • Pinch of salt

  • 2 tbsp Daiya® mozzarella style shreds


  1. Preheat the oven to 350°F.

  2. Cut the zucchini into six 1/4-inch thick rounds.

  3. In a small bowl, whisk together the tomato paste, olive oil, balsamic vinegar, dried oregano, and salt.

  4. Spread the mixture evenly on the zucchini.

  5. Top with the Daiya® mozzarella style shreds.

  6. Place on a baking sheet and bake for 15 minutes, or until the shreds start to melt.

  7. Cool slightly and serve.
