Barbecue Pulled Jackfruit

Did you know jackfruit is the largest tree fruit in the world? Just as big in taste is this recipe for barbecue pulled jackfruit. So grab the napkins, and dig into this delightful meal. Adapted from Buzzfeed Australia’s “BBQ Pulled Jackfruit That’ll Fool Meat Eaters.”

  • Two 20 oz cans green jackfruit in brine

  • 1/2 tbsp brown sugar

  • 1 tsp smoked paprika

  • 1 tsp garlic powder

  • 1/2 tsp chili powder

  • 1/2 tsp salt

  • 2 tbsp oil

  • 1 cup barbecue sauce

  • 1/4 cup water

  • 8 pack buns

  • Red onions and any other no-protein sandwich toppings you like

  1. Rinse and drain the canned jackfruit and place it in a bowl.

  2. Add the brown sugar, smoked paprika, garlic powder, chili powder, and salt, and stir until well combined.

  3. Heat 2 tbsp of oil over medium heat in a large skillet and fry the jackfruit for 3 minutes.

  4. Next, add 1 cup of barbecue sauce, and reduce the heat to low.

  5. Cover and simmer for about 30 minutes, adding the ¼ cup of water to thin the sauce if needed. Stir occasionally.

  6. Once the jackfruit has softened, remove it from the heat and pull it apart with 2 forks.

  7. Serve it on a bun with all your favorite no-protein fixings.
