For dressing, combine the yogurt, non-dairy creamer, lemon juice, Vegenaise®, mustard, 3/4 tsp salt, and 1/4 tsp pepper. Whisk to mix together, and set aside.
2 Peel the tough outer layer of the broccoli stalks, and trim off 1/4 inch from the bottoms of the stalks. (There should be about 3/4 lb tender broccoli stalks remaining). Use a food processor to shred the stalks and then the carrots.
Toss the shredded broccoli and shredded carrots with the dressing to combine.
Sprinkle with raisins and serve.
