Ingredients

  • 1 cup So Delicious® plain coconut milk yogurt
  • 1/4 cup non-dairy creamer
  • 3 tbsp lemon juice
  • 2 tbsp Vegenaise® dressing and sandwich spread
  • 2 tsp spicy brown mustard
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1 1/4 lb broccoli stalks (no florets)
  • 1 large or 2 medium carrots
  • 1/3 cup raisins

Instructions

  • 1For dressing, combine the yogurt, non-dairy creamer, lemon juice, Vegenaise®, mustard, 3/4 tsp salt, and 1/4 tsp pepper. Whisk to mix together, and set aside.
  • 22 Peel the tough outer layer of the broccoli stalks, and trim off 1/4 inch from the bottoms of the stalks. (There should be about 3/4 lb tender broccoli stalks remaining). Use a food processor to shred the stalks and then the carrots.
  • 3Toss the shredded broccoli and shredded carrots with the dressing to combine.
  • 4Sprinkle with raisins and serve.
