Ingredients

  • ½ cup vegetable shortening
  • ⅓ cup margarine, softened
  • 2 tbsp sugar
  • ¼ cup brown sugar, packed
  • 1 package vanilla instant pudding mix
  • 1 tsp vanilla extract
  • ⅓ cup water
  • 2 cups low-protein baking mix
  • 1½ tsp baking powder
  • ½ tsp salt

Instructions

  • 1Preheat your oven to 375°F
  • 2In a medium bowl, mix the shortening, margarine, and both sugars until well blended.
  • 3Add the pudding mix and vanilla extract, and mix well.
  • 4Gradually add water as you continue mixing.
  • 5Stir in the low-protein baking mix, baking powder, and salt, and thoroughly combine.
  • 6Using clean hands, shape the dough into small walnut-size balls, and place on an ungreased cookie sheet.
  • 7Flatten with a fork or spoon to make cookies into disc shapes.
  • 8Bake for 12 minutes. Let cool before serving.
